A Fruity, Nutty Treat

Muesli Slice

Here is a great recipe that a friend recently shared with me, although I’ve made a few adjustments. It’s incredibly moresh, so be warned.

75g butter
1/2 cup soft brown sugar
1/4 cup honey
1/2 cup coconut
1/2 cup dried fruit (I used cranberries)
1/2 cup chopped, unsalted nuts (I used peanuts and almonds)
1/2 cup seeds (I used sunflower, pumpkin and sesame)
1/2 cup wholemeal flour
1 teaspoon LSA
1/2 teaspoon baking powder

Preheat oven to 160 deg. Melt butter, brown sugar and honey in one bowl. In a separate bowl mix all the dry ingredients together, then stir in the wet mixture. Press mixture into a 20cm square lined tray. Cook until golden. Cut into slices while the slice is still warm. Leave to chill in tray. Eat!

Top Tip: It didn’t make as much as I was expecting, so you might want to double the recipe.
